(WXYZ) — New year's celebrations will be look a little different as we finally say goodbye to 2020.
Chef Rebecca Wauldron of Busch's Food Market is sharing some menu ideas to ring in the new year:
Raclette Cheese Appetizer Platter
(Yield 4-6 Servings)
Ingredients:
1 large piece Raclette cheese (about 8-12 ounces of cheese)
1 fresh French Baguette, sliced
Various Accompaniments:
Boiled, halved New Potatoes
Pickled Cornichon
Pickled Onions
Sliced smoked or cured sausages
Thinly sliced chicken, roast beef, or ham
Minced Red Onion
Directions:
1. Arrange the accompaniments on a large tray or platter with the baguette slices.
2. Preheat oven to 400 degrees. Remove the rind from the piece of raclette and place it in a lightly oiled gratin or small baking dish.
3. Place the raclette in the oven and bake for 8-10 minutes or until the cheese is bubbly and gooey.
4. Carefully remove the cheese from the oven and place it on or next to the platter of accompaniments, on a heat proof surface.
5. Use a spoon to scoop out the melted cheese onto baguette slices or halved potatoes. Top with remaining accompaniments.
Sparkling Wine Cocktail: Spiced Blood Orange Sparkler
(Yield: 1 drink)
Ingredients:
1 ½ ounce gin, vodka, or silver rum
½ ounce freshly squeezed lemon juice
1 ounce spiced blood orange syrup
2 ounces sparkling wine
Garnish: Lemon twist
Optional Garnishes: fresh sage sprigs or fresh rosemary sprigs.
Directions:
1. Combine the alcohol of choice with the lemon juice and the blood orange syrup in a cocktail shaker.
2. Add a large scoop of ice, seal the shaker, and shake for about 10 seconds.
3. Immediately strain the contents of the shaker into a champagne flute, and top with the sparkling wine.
4. Garnish the cocktail with a lemon twist and sprigs of fresh sage or rosemary if desired.
For a no alcohol cocktail: Combine 1 to 1 ½ ounces of the blood orange syrup and ½ ounce lemon juice in a glass with ice. Add 4-6 ounces of sparkling water for a less sweet drink. For a sweeter drink add 4-6 ounces of sparkling lemon soda, sparkling apple cider, or ginger ale.
