Back to School: 5 Super Fun & Easy Lunch Recipes

School is back in session for some, and coming up soon for others! The good news is that you finally get a little break from your kids, but the bad news is you have to figure out what to put in their lunch boxes before sending them off for the day. Brian Corsetti is here to make life easier for you with five super fun and easy meals you can make for the whole family

1.  Pizza Bagels

Take some tomato sauce and smother it on a bagel, and then add some mozzarella cheese. Put it in the oven for about 10-12 minutes. To add some greenery, pair it with cucumber cookies.

2.  Cucumber Cookies

When you cut your cucumbers, cut them about half-inch (a little thicker than you normally do for a salad) and add hummus between two slices of cucumber. Yum!

3.  Salad in a Jar

Start off with your dressing at the bottom, then add any veggies that won't get soggy during the day, like yellow peppers, cabbage, and corn. On top add romaine, spinach or the lettuce of your choice. Nothing goes better with salad than rice cakes!

4.  Peanut Butter & Strawberry Rice Cakes

Cut your strawberries very thin, spread your peanut butter on the rice cakes, then add the sliced strawberries on top. Simple, and the kids will love it.

5.  Pancake Tacos

Add your pancake mix, an egg, and water, then fire up the stove and pour. Now the fun part! Add some peppers, turkey, mozzarella cheese, and spinach to one pancake. For the second pancake, add peanut butter and bananas. Now you have two yummy pancake tacos that your kids will love.

All three of these recipes are simple, cheap and delicious. They're actually so good, you might even make them for your own lunch.
