Goodbye, Unicorn Food! Here's 3 Food Trends to Look Forward to in 2018

Now that the unicorn food trend is finally a thing of the past, we can make room for some new ones that might actually like! Chef Justin Landeis of Hotel Adeline is bringing you three food trends already making waves, and using them to create delicious new concoctions.

1. Oat Milk

Coconut, soy and almond milk are so last year. Now, it's all about oat milk! Oat milk is a great dairy alternative and what makes it better than soy and almond milk is that you're not going to have any of those common allergies. This means that it's gluten, nut and dairy-free! You can add it to your favorite coffee or latte and people say it tastes just as creamy as milk.
 

2. Chaga Mushrooms

Turns out, chaga mushrooms are an intense super food and are packed with minerals. Chef Justin says they'll add depth and dazzle to almost any savory meal. Do you feel like trying it out? Here's a mouthwatering recipe to try for Chaga Chocolate Chicken Mole.

Ingredients
12 chopped green onions
6 cloves of garlic
2tbsp mined ginger
3 sliced Fresno peppers
1/4 cup cashews
1/2cup Chaga chunks
Juice of one orange
½ tbsp cinnamon
2 cups chicken stock
1 Chipotle from can
1tbso Adobo paste from canned Chipotle 
1/4cup dark 
 5 chicken thighs

Directions
Sauté green onions, garlic, ginger, Fresno peppers and cashews. Add in Chaga, orange juice, cinnamon, chicken stock, Chipotle and Adobo paste and simmer for about 20 minutes. Add chocolate and blend. Sear chicken thighs with salt and pepper. Braise in mole, about 30 minutes. Shred chicken with forks.

3. Hibiscus

Here's another ingredient that's all the craze in the culinary world - hibiscus! Today, we're using it as the key ingredient for a dessert with a delightful bouquet, Hibiscus Crème Brûlée.

Ingredients
3 cups of cream
1/2 cup sugar
1 tsp vanilla paste
1/4 cup hibiscus syrup
5 egg yolks

Directions
Combine cream, sugar, vanilla paste, hibiscus syrup and bring to a simmer. Temper mixture into egg yolks. Divide custard into dishes placed in a water bath. Bake at 200F for about 45 minutes. Top with sugar when they're done, and get ready for the ceremonial torching! Then take the hibiscus flower and put it into the sugar while the sugar is still hot. You'll definitely impress your guests with this one!
