LANSING, Mich. — Jeremy Davis’ day job is the director of LCC’s Business and Economics Department but he also lives in another world; that of a baker.
Davis, a married father of three turned his love of baking into the thriving home business Designed by Daddy Custom Cakery. He turned up his artistry skills a few notches when he beat out four other bakers to win the “Girl Scout Cookie Championship” on the Food Network.
To move forward in the competition Davis created a Do-si-dos® Blondie with a tortilla chip crust. That delightful treat earned him passage to the final round where he embraced his Michigan roots and created a cake in the image of the Mackinac Bridge.
The heavenly loaf that wowed the show’s judges, Nacho Aguirre, Katie Lee and Zac Young was made from a dark chocolate cake with toasted coconut buttercream, caramel drizzle and crunched up Samoas®.
All of the competitors he faced attended culinary school and work professionally as bakers and chefs. This added another dimension to the contest for Davis who enjoyed pitting the skills gained in his home business against their professional training.
“It felt amazing to take on the culinary school graduates,” he said. “Working in higher-ed myself, I definitely value the education someone gets in their profession. I did have to remind them that even though I didn’t go to culinary school, I was a professional baker. Baking isn’t a hobby; I do run a business, it just happens to be out of my home.” Despite the competitive nature, Davis said, “It was amazing meeting them and we have stayed in contact and built a really nice friendship.”
The competition was a fun experience for Davis who felt honored just to be cast on the show. “It was great to have a backstage look at how the shows I love to watch on the Food Network are actually created and produced. It also didn’t hurt that I won.”
Davis admits to being a mini-celebrity around his Charlotte home town. “I’m getting a lot more inquires for cakes,” he said.
As the winner of the “Girl Scout Cookie Championship” Davis received a “dream outdoor vacation” and a year’s supply of Girl Scout cookies.
